Lemon & Herb Baked Chicken Breasts
4  boneless, skinless chicken breasts
2 tablespoons olive oil
2 lemons, zested and juiced
2 cloves of garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper, to taste
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a small bowl, mix together the olive oil, lemon zest, lemon juice, garlic, basil, oregano, thyme, salt, and pepper.
Place the chicken breasts on the prepared baking sheet and brush with the lemon and herb mixture.
Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Serve the chicken with a side of vegetables, such as roasted broccoli or sautéed greens, and a whole grain, such as quinoa or brown rice.
